Savory Bread Pudding with Spinach, Gruyère and Shiitakes

Puffed and golden, this savory bread pudding emerges from the oven with the earthy perfume of shiitake mushrooms.

Served with fresh fruit and slices of bacon or ham, it’s a delicious centerpiece for a brunch buffet. It also performs double duty as an elegant side dish for a rib roast or steak. If you happen to have leftovers, they reheat well in the microwave.

Baby Kale and Bok Choy with Sesame and Ginger

Unlike mature kale leaves you buy in a bunch, baby kale doesn’t need any advance prep and cooks in a jiffy. Here we’ve combined it with baby bok choy, sesame oil, ginger and garlic for a flavorful and super-healthy stir fry. A dash of mirin (Japanese rice wine, available in most supermarkets) adds just the right sweet note to balance the piquant greens. These delicious veggies make a great-tasting combo when served over brown rice.

Spaghetti with Baby Kale, Chicken and Capers

We love baby kale in pasta dishes: it’s so easy and adds great flavor, texture, color and nutrients. Here we’ve combined some favorite Mediterranean ingredients — garlic, sundried tomatoes, capers, parsley — and paired them with chicken and kale. (This dish is just as delicious without the chicken if you prefer a vegetarian version.) Leftovers, if there happen to be any, can be rewarmed easily in the microwave.

Garlic Roasted Broccolette

Broccolette is a cross between broccoli and gai lan (Chinese kale). If you aren’t familiar with this vegetable, you’re in for a treat! (Broccolette is Earthbound’s organic variety of this delicious veggie; you may also see similar items in the supermarket called broccolini or baby broccoli.)

Oven-roasting brings out the sugars and flavors of many vegetables; here it makes the garlic soft and sweet, and browns the broccolette tops lightly, but leaves the stems crisp-tender.
