This salad by @zimmysnook is stunning for a specia This salad by @zimmysnook is stunning for a special dinner but so simple you’ll want to get it on the table regularly. It highlights the bright and tangy flavors of winter fruits, perfectly complemented by a simple honey Dijon vinaigrette.

Salad Ingredients:
4 cups Earthbound Farm Organic Baby Red Butter Lettuce
4 cups Earthbound Farm Organic Baby Arugula
1 cup fresh pomegranate arils
2 blood oranges, skin removed & sliced
2 seedless clementines, peeled & sectioned
1 small apple, core removed, thinly sliced
1/2 cup candied pecan pieces (store bought or home made)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Honey Dijon Dressing
2 tablespoons honey
1 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground ginger
1/4 cup balsamic vinegar
3/4 cup extra virgin olive oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the greens on a large platter. Add the, oranges, clementines and apple, then sprinkle with pomegranate arils and pecans.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Just before serving, drizzle about 1/2 cup of the dressing (more to taste) over the salad and gently toss.

Combine all ingredients in a glass jar (with a tight-fitting lid) and shake well to combine.

Refrigerate leftover dressing and use for another salad or drizzle on roasted vegetables.

Caramelized onions + wilted greens + goat cheese= Caramelized onions + wilted greens + goat cheese= the perfect toppings for holiday crostini! Kick off the festivities with little bites of nutritious delight with this simple appetizer!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 large white or yellow onions, sliced into thick half moons
1 tablespoon butter
1 pinch of salt
splash of sherry vinegar
1/2 baguette, sliced into ½ inch-thick rounds
2 tablespoons olive oil (or more to taste)
2 handfuls organic greens (Baby Spinach or Power Greens)
4 ounces favorite soft goat cheese
honey
salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Coat the bottom of a large pan with olive oil. Add butter. Heat pan over medium heat until the butter melts and the oil shimmers. Add onions, toss in the oil-butter mixture and turn the heat to as low as the burner allows. Add salt. Once the onions begin to soften, spread them out in the pan and set the timer for 30 minutes. Stir occasionally but the key to caramelizing onion is leaving them alone to gently soften and cook. If the onions begin to dry out, add a bit more oil and stir. Once the onions begin to brown, gently scrape the pan to incorporate any brown bits. When the onions are the color of dark caramel, add a splash of sherry vinegar, stir, and remove from heat.

Add 1 tablespoon oil to a large pan and heat over medium. Once the oil shimmers, add greens and toss. They’ll wilt quickly. Add a splash of water, season with salt and pepper, toss again, and remove from heat.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the broiler. Brush the bread slices with olive oil and place on a cookie sheet. Broil for 1 minute, or until the toasts are golden brown. Watch them closely as they’ll burn quickly. Remove from oven.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once cool, spread each toast with goat cheese and top each with a dollop of caramelized onions. Divide the wilted greens evenly across the toasts. Drizzle with honey and sprinkle with salt.
