Veggie and Tofu Stir Fry

This stir fry is a flavorful, quick meal that’s perfect for a healthy, plant-based dinner! Perfect for a weeknight dinner, it’s topped with sesame seeds for a nutty crunch.


Ingredients

9 oz Earthbound Farm Vegetable Medley

14 oz extra-firm tofu, drained and cubed

2 tbsp sesame oil (divided)

2 tbsp low-sodium soy sauce (or tamari for gluten-free)

1 tbsp rice vinegar

1 tbsp hoisin sauce (optional for sweetness)

2 cloves garlic, minced

1 tsp grated fresh ginger

2 tbsp sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Salt and pepper to taste


Directions

Pat tofu dry with paper towels and cut into 1-inch cubes. For extra crispiness, press tofu to remove excess water before frying. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook for 5-7 minutes, turning to brown all sides. Remove and set aside.

In the same skillet, add the remaining 1 tablespoon of sesame oil. Add minced garlic and ginger, stirring until fragrant (about 30 seconds). Toss in the Earthbound Farm Vegetable Medley and stir fry for 4-5 minutes until slightly tender but still crisp.

In a small bowl, whisk together soy sauce, rice vinegar, and hoisin (if using). Pour the sauce over the vegetables and stir to coat.

Return the tofu to the skillet and gently mix with the vegetables. Stir fry for an additional 2 minutes until everything is well-coated and heated through.

Divide the stir fry into bowls and top with sesame seeds and green onions. Serve over rice or noodles.
