1 6oz bag Earthbound Farm Organic Shredded Carrots

2 large eggs

1/2 cup white sugar

1/4 cup brown sugar

1/2 cup plain yogurt

1/2 cup vegetable oil

1 tsp vanilla extract

1 3/4 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt


1/2 cup chopped pecans or walnuts (for toppings)

Cream Cheese Frosting:

1 cup powdered sugar

8 oz softened cream cheese

1/4 cup unsalted butter, softened

1 tsp vanilla extract


Preheat your oven to 350°F. Grease and flour a 9×5-inch loaf pan.

In a large bowl, whisk together the eggs, white sugar, brown sugar, yogurt, vegetable oil, and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded carrots and, if desired, chopped nuts.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the carrot bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Cream Cheese Frosting:

In a medium bowl, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the carrot bread has cooled, spread the cream cheese frosting over the top. Optionally, sprinkle chopped pecans or walnuts over the frosting for added crunch and flavor.
