Discover a crowd-pleasing party appetizer that’s not only delicious but also a clever way to sneak in some greens. These Spinach Artichoke Wonton Cups are the perfect blend of savory flavors and crispy textures, making them a great addition to your gathering.


Ingredients

1 package of wonton wrappers

1 cup chopped artichoke hearts (canned and drained)

2 cups Earthbound Farm Organic Baby Spinach

1 tablespoon minced garlic

4 oz cream cheese, softened

1/4 cup mayonnaise

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese

1/4 teaspoon salt (adjust to taste)

Cooking spray

Chopped fresh parsley for garnish (optional)


Directions

Preheat your oven to 350°F and spray a muffin tin with cooking spray.

In a medium-sized pan, heat a little oil or cooking spray over medium heat. Add the minced garlic and chopped artichoke hearts. Sauté for 2-3 minutes until the garlic becomes fragrant and the artichokes begin to soften.

Add the spinach to the pan and sauté for an additional 2-3 minutes until the spinach wilts down. Make sure to stir frequently.

Reduce the heat to low, then add the softened cream cheese, mayonnaise, garlic powder, black pepper, grated Parmesan cheese, and salt to the pan. Stir the mixture until all the ingredients are fully incorporated and the mixture is smooth and creamy. Remove the pan from heat.

Take a wonton wrapper and gently press it into each muffin cup in the prepared tin. Ensure that the wrapper lines the bottom and sides of each cup, forming a little cup shape. Lightly spray the wrappers with cooking spray.

Place the muffin tin in the preheated oven and bake for about 5 minutes or until the wonton wrappers become lightly golden and crisp.

Remove the muffin tin from the oven and carefully spoon approximately 1 heaping tablespoon of the spinach artichoke mixture into each wonton cup.

Return the muffin tin to the oven and bake for an additional 10-12 minutes or until the edges of the wonton wrappers are golden brown and the filling is heated through.

Once the wonton cups are done, remove them from the oven. If desired, sprinkle some chopped fresh parsley on top of each cup for a pop of color and flavor.

Let the Spinach Artichoke Wonton Cups cool for a few minutes before serving. They are best enjoyed while still warm.
