Start your day with a burst of freshness! Who says salads are just for lunch or dinner? Dive into our vibrant breakfast salad, packed with crisp greens, protein-rich hard-boiled eggs, and creamy avocado toast. It’s a delightful way to fuel your morning with nutrients and flavor.


Ingredients

For the Salad:
5 oz. Earthbound Farm Organic Spinach + Butter Blend

2 hard-boiled eggs, sliced

For the Dressing:
2 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

For the Avocado Toast:
2 slices of whole grain bread

1 ripe avocado

1/2 cup cherry tomatoes, halved

Salt and pepper to taste

Optional toppings: red pepper flakes, sesame seeds, or fresh herbs


Directions

In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, salt, and pepper until well combined. Adjust seasoning to taste.

Toast the slices of whole grain bread until golden brown. Mash the ripe avocado and spread it evenly onto the toasted bread slices. Arrange the halved cherry tomatoes on top of the mashed avocado. Season with salt and pepper to taste. Sprinkle with optional toppings such as red pepper flakes, sesame seeds, or fresh herbs if desired.

Place the baby spinach and red baby butter lettuce blend in a large salad bowl. Drizzle with dressing and arrange the sliced hard-boiled eggs over the salad greens.

Serve the lightly dressed breakfast salad with avocado toast on the side.
