Southwest Quinoa Salad

Fresh, hearty, and packed with flavor, this salad layers crisp romaine hearts with smoky quinoa, bright salsa, creamy avocado, crunchy tortilla chips, and a zesty cilantro lime yogurt dressing.It’s the perfect balance of cool and spicy, creamy and crunchy — basically a fiesta on a plate.


Ingredients

For the Cilantro Lime Yogurt Dressing:
● ½ cup plain Greek yogurt
● ½ cup fresh cilantro
● 1 clove garlic
● Juice of 1 lime
● 1 tablespoon olive oil
● Salt, to taste

For the Quinoa Mixture:
● 1 tablespoon olive oil
● ½ small onion, finely chopped
● 1 clove garlic, minced
● 1 tablespoon adobo sauce (from a can of chipotles in adobo)
● 1 teaspoon chili powder
● ½ teaspoon cumin
● ¾ cup quinoa, rinsed
● 1½ cups vegetable broth
● ½ teaspoon salt

For the Salad Assembly:
● 5oz Earthbound Farm Romaine Hearts
● 1 avocado, sliced
● 1 cup salsa (tomato, onion, and a little cilantro — fresh or store-bought)
● Handful of tortilla chips
● Extra chopped cilantro, for garnish


Directions

Prepare the Cilantro Lime Yogurt Dressing by blending the Greek yogurt, cilantro, garlic, lime
juice, olive oil, and salt in a blender until smooth. Set aside.

To make the quinoa, heat olive oil in a medium saucepan over medium heat. Add the chopped
onion and garlic; cook until softened, about 5 minutes. Stir in the adobo sauce, chili powder, and
cumin; cook for 1 minute more. Add the quinoa, vegetable broth, and salt. Increase heat and
bring to a boil, then cover, reduce heat to low, and simmer until quinoa is tender and liquid is
absorbed, about 15 minutes. Let the mixture sit uncovered for a few minutes to cool slightly.

To assemble, arrange romaine hearts on a platter or individual plates. Spoon the quinoa mixture
over the romaine. Top with avocado and spoonfuls of salsa. Drizzle generously with the Cilantro
Lime Yogurt Dressing. Scatter tortilla chips over the top and garnish with extra chopped cilantro.

Serve immediately while the romaine is crisp and the toppings are fresh.
