Shrimp and Pineapple Baby Red Butter Salad

This fresh and flavorful Shrimp and Pineapple Salad is perfect for a light lunch or dinner, with the tangy and sweet dressing complementing the succulent shrimp and juicy pineapple.


4 cups Earthbound Farm Baby Red Butter Lettuce
12 large shrimp, peeled and deveined
1 cup fresh pineapple chunks
1 tablespoon olive oil (for sautéing shrimp)
Salt and pepper, to taste

Lime Honey Mustard Dressing Ingredients:
2 tablespoons lime juice (freshly squeezed)
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon Dijon mustard
1/2 teaspoon soy sauce
Salt and freshly ground black pepper, to taste


Place the baby red butter lettuce in a large salad bowl.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the skillet and sauté for 2-3 minutes on each side, or until they are pink and cooked through. Remove from heat and let cool slightly.

Add the fresh pineapple chunks to the bowl with the lettuce.

In a small bowl, whisk together the lime juice, honey, olive oil, Dijon mustard, and soy sauce until well combined. Season with salt and freshly ground black pepper to taste.

Add the sautéed shrimp to the salad bowl.

Drizzle the dressing over the salad and gently toss to combine.

Divide the salad into two servings and enjoy immediately.
