Roasted Broccoli with Orange, Avocado and Citrus Yogurt Dressing

Ingredients

For the Blood Orange and Avocado Salad:

2 bags Earthbound Farm Organic Broccoli Florets

2 tablespoons olive oil

Salt and pepper to taste

2 blood oranges or navel oranges, peeled and segmented

2 ripe avocados, peeled, pitted, and sliced

Fresh mint leaves, optional for garnish

For the Citrusy Yogurt Dressing:

1/2 cup plain Greek yogurt

2 tablespoons mayonnaise

Zest of 1 blood orange

Juice of 1 blood orange

1 clove garlic, minced

1 tablespoon honey

Salt and pepper to taste


Directions

Preheat your oven to 425°F.

Toss the broccoli florets with olive oil, salt, and pepper in a large bowl until they are evenly coated. Spread the broccoli out in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes or until the edges are crisp and slightly browned. Toss the broccoli halfway through roasting for even cooking.

In a mixing bowl, combine the plain Greek yogurt and mayonnaise. Add the zest and juice of one blood orange to the mixture. Mix in the minced garlic for added flavor. Drizzle in the honey and season with salt and pepper to taste. Adjust the honey, salt, and pepper quantities to your liking. Spread this citrusy yogurt dressing evenly on a large serving platter or dish.

Once the roasted broccoli is done, remove it from the oven and let it cool for a few minutes. On top of the citrusy yogurt dressing, arrange the roasted broccoli, blood orange segments, and avocado slices. Garnish with mint leaves.
