Grilled Peach & Burrata Summer Salad

Grilled peaches bring smoky sweetness to a bed of Earthbound Farm Regenerative Spring Mix, layered with creamy burrata, juicy cherry tomatoes, blackberries, fresh mint, and crunchy pistachios. A balsamic glaze ties it all together. This is the salad you bring to every summer table.


Ingredients

1 package Earthbound Farm Regenerative Spring Mix

2 ripe peaches, halved and pitted

1 cup blackberries

1 cup cherry tomatoes (red or golden), halved

8 oz fresh burrata

¼ cup fresh mint leaves

⅓ cup pistachios, roughly chopped

For finishing:

2 Tbsp olive oil (for grilling)

Balsamic glaze, for drizzling


Directions

  1. Grill the peaches
    Heat a grill or grill pan to medium-high. Brush peach halves with olive oil and place cut-side down. Grill 3–4 minutes until char marks appear and fruit is slightly softened. Remove and slice into wedges.
  2. Build the base
    Spread the Earthbound Farm Regenerative Spring Mix across a large serving platter. Scatter cherry tomatoes and blackberries evenly over the greens.
  3. Add the toppings
    Arrange grilled peach wedges across the salad. Tear burrata into pieces and nestle throughout. Scatter mint leaves and chopped pistachios over the top.
  4. Finish & serve
    Drizzle generously with balsamic glaze. Season with flaky sea salt and cracked pepper. Serve immediately while the peaches are still warm.
