This simple yet flavorful side dish combines tender roasted vegetables, savory bacon, and the fresh, herbaceous flavor of dill for a delightful accompaniment to any meal.


Ingredients

8 oz Earthbound Farm Snap Peas and Carrots
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
4 slices bacon, cooked until crisp and crumbled
1 tbsp fresh dill, chopped


Directions

Preheat your oven to 400°F and line a baking sheet with parchment paper or foil for easy cleanup.

In a mixing bowl, toss the snap peas and carrots mix with olive oil, salt, and pepper until evenly coated.

Spread the snap peas and carrots in a single layer on the prepared baking sheet. Roast for 15-18 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
