With just 15 minutes of prep and zero cooking required, this is the ultimate no-fuss recipe for busy weekdays, and on-the-go lunches.


Ingredients

● 1 Earthbound Farm Balsamic Crunch Salad Kit
● 3 cups shredded rotisserie chicken
● ½ cup plain Greek yogurt or regular plain yogurt
● 4 whole wheat pita pockets, warmed
● Optional add-ins: hummus, sliced cucumbers, cherry tomatoes, feta crumbles, or extra greens


Directions

1. In a large bowl, combine the salad greens, toppings and included golden balsamic vinaigrette. Toss well to coat.

2. In a separate bowl, combine the shredded chicken with ½ cup plain yogurt. Fold in the tossed salad mix until everything is evenly coated. Add a little extra dressing from the kit if desired.

3. Warm the pita pockets slightly if needed. Cut each in half and gently open the pockets. Spread hummus inside if using, then fill each with the chicken salad mixture.

4. Eat immediately or wrap in foil and refrigerate for up to 24 hours for a chilled on-the-go meal.
