Kale Pesto: Handful of organic kale, 1/4 lemon squeezed, 2 cloves of garlic, roasted pine nuts, parmesan, salt + pepper to taste. Blend together.

Dough Build: 180g leaven, 400g AP flour, 200g (11.5% protein) bread flour, 468g water, 12g EVOO, 15g salt 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Top focaccia with kale pesto, pickled onions, olives and lemon slices
 Preheat oven to 480°F.  Bake for 20-22 minutes.

Vinaigrette:
¼ cup red wine vinegar
½ cup extra-virgin olive oil
3 tablespoons clover honey
1½ teaspoons fresh thyme leaves, chopped
Salt and freshly ground pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salad:
1 5-ounce container Earthbound Farm Organic Baby Kale, Spinach, or Organic Baby Arugula
1½ cups watermelon cubes
6 ounces feta cheese, drained and cubed (or crumbled, or cut into triangles)
¾ cup very coarsely chopped toasted walnuts
½ cup pitted brined green and/or black olives, halved lengthwise
20 basil leaves, chopped
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Make the vinaigrette:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Whisk all of the ingredients together in a bowl; make sure to dissolve the honey. Season with salt and pepper.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Make the salad:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toss whichever organic greens you are using with some of the vinaigrette until all the leaves are lightly coated. Drizzle the watermelon lightly with some of the dressing. Mound the salad on plates and arrange the watermelon and feta on the greens. Top with the toasted walnuts and olives and garnish the salads with the basil. Serve the remaining dressing on the side, giving it a quick stir before pouring.

For a little something extra that adds substance w For a little something extra that adds substance without heaviness to your salad, grains might be your new favorite secret ingredient! This Crispy Rice Power Greens Salad is a new favorite around here, are you going to give it a try?
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup brown or white frozen rice
2 cups Earthbound Farm Organic Power Greens
2 teaspoons olive oil
1 clove garlic
1-2 tablespoons coconut oil
1 red bell pepper diced
1 shallot diced
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 green onions sliced
3 tablespoons chopped peanuts
a bunch of torn cilantro
2 lime wedges
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the power greens in a large bowl and massage with 1 teaspoon of olive oil. Set aside.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat a large skillet over medium heat and add 1 teaspoon olive oil. Once heated, add frozen rice and arrange in an even layer, leave to cook without stirring or flipping the rice for 2-3 minutes or until crisped. Stir and crisp the other side of the rice, remove from heat into a bowl and set aside.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Reheat the pan over medium heat. Add 1-2 tablespoons of coconut oil. Add the peppers and shallots and cook until softened, about 5 minutes. Add in the garlic and cook for 1 minute. Transfer the peppers and shallots to the bowl with the rice. Stir together.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a bowl, whisk together the soy sauce, vinegar and sesame oil.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Gently toss the power greens with the crispy rice mixture. Serve on a plate and drizzle with the soy sauce mixture. Top with green onions, peanuts and cilantro! Spritz with lime and serve. Pairs nicely with a protein like chicken, or tofu.

1/4 tsp salt
1/4 tsp cumin
