Asparagus and Strawberry Salad with Lemon Poppyseed Dressing

This vibrant salad features Earthbound Farm Organic 50/50 Blend, tender blanched asparagus, juicy sliced strawberries, and the satisfying crunch of sliced almonds, all harmoniously brought together by a zesty Lemon Poppyseed Dressing. Our easy-to-follow recipe ensures a quick and satisfying meal that’s perfect as a side dish or a light, refreshing entrée.


For the Salad:

4 cups Earthbound Farm Organic 50/50 Blend

1 bunch of fresh asparagus, trimmed and blanched

1 cup fresh strawberries, hulled and sliced

1/4 cup sliced almonds (toasted, if desired)

Salt and pepper to taste

For the Lemon Poppyseed Dressing:

1/4 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 tablespoon honey

1 teaspoon Dijon mustard

1 teaspoon poppy seeds

Salt and pepper to taste


In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, lemon zest, honey, Dijon mustard, poppy seeds, salt, and freshly ground black pepper. Set aside.

In a large salad bowl, combine the 50/50 mix. Slice the blanched asparagus into bite-sized pieces and add them to the salad bowl. Add the sliced strawberries to the bowl as well.

Drizzle the Lemon Poppyseed Dressing over the salad. Start with a portion of the dressing and add more to your preference. Gently toss the salad to ensure that all the ingredients are coated with the dressing. Season with salt and pepper to taste.

Add crumbled feta cheese and almonds. Enjoy!
