Ingredients

5 oz Earthbound Farm Beet Greens Blend
1 ripe avocado, sliced
1 cup sungold tomatoes, halved
3 oz marinated feta cheese, crumbled or cubed
3 Tbsp extra-virgin olive oil
1 Tbsp white wine vinegar (or red wine vinegar)
1 tsp Dijon mustard
½ tsp honey (optional, for balance)
Sea salt, to taste
Freshly cracked black pepper, to taste


Directions

In a small bowl, whisk together olive oil, vinegar, Dijon mustard, and honey until emulsified.
Season with salt and pepper.
Place the Beet Greens Blend in a large mixing bowl or on a serving platter.
Scatter sungold tomatoes across the greens.
Add slices of avocado and tuck in pieces of marinated feta.
Drizzle the vinaigrette over the salad just before serving. Toss lightly if desired, or leave
