Winter Balsamic Tofu and Squash Flatbread

This vegetarian, protein-packed dish is ideal for a comforting lunch or quick dinner. Perfect for plant-based eaters and anyone craving a hearty, wholesome meal! 


Ingredients

1 block (14 oz) extra-firm tofu, cubed
2 cups butternut squash, cubed
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon olive oil
1 flatbread
1 cup hummus
1 Earthbound Farm Organic Balsamic Crunch Salad Kit


Directions

Preheat the oven to 400°F and line a baking sheet with parchment paper.

In a large bowl, toss the cubed tofu and butternut squash with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them out evenly on the prepared baking sheet. Roast in the oven for 30-35 minutes, tossing halfway through, until golden and tender.

Prepare the Balsamic Crunch Salad Kit according to package instructions, mixing the greens with the included toppings and dressing.

Spread a generous layer of hummus onto the flatbread. Top with the dressed salad mix, then add the roasted tofu and butternut squash on top.

Serve warm or at room temperature for a hearty and flavorful winter meal.
