This vibrant Lemon Arugula Summer Salad is bursting with sweet and tangy flavors, making it a perfect warm-weather lunch or side dish. Made with Earthbound Farm’s Lemon Arugula Salad Kit, juicy apricots, dark cherries, grilled corn, and crispy homemade sourdough croutons, this salad is a seasonal favorite that balances fruit, crunch, and peppery greens in every bite.


Ingredients

● 1 Earthbound Farm Lemon Arugula Salad Kit
● 2 fresh apricots, sliced
● ½ cup fresh cherries, pitted and halved
● 1 ear of corn, husked
● 1½ cups cubed sourdough bread (day-old preferred)
● 2 tbsp olive oil
● Salt and pepper, to taste


Directions

1. Preheat oven to 375°F. Toss sourdough cubes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 10–12 minutes, flipping halfway, until golden and crisp. Set aside to cool.

2. Heat a grill pan or outdoor grill over medium-high heat. Grill corn for 6–8 minutes, turning occasionally, until lightly charred. Let cool, then cut kernels off the cob.

3. In a large bowl, add salad greens from the Lemon Arugula Kit. Add the grilled corn kernels, sliced apricots, cherries, and included toppings from the kit.

4. Drizzle with the lemon vinaigrette from the kit and toss gently to combine. Fold in the homemade croutons just before serving for maximum crunch.
