Ingredients
- 3 ripe medium bananas
- 3 eggs
- 1 teaspoon vanilla
- 3 tablespoons maple syrup
- 3 cups Earthbound Farm organic baby spinach
- 2 1/2 cups almond flour
- 1/2 cup cacao powder
- 1 teaspoon baking soda
- Pinch of salt
- Optional: 1/2 cup chocolate chips + more for the top!

Blend together all of the ingredients (except for the chocolate chips), in a food processor or high speed blender until smooth.
Spoon the batter into a lined or greased muffin tin and add chocolate chips on top if using.
Bake at 350°F for 17-20 min or until a toothpick comes out dry! Let cool and enjoy!

Muffins
These sneaky spinach muffins turned out great! I did let the batter rest in the muffin cups for 15 minutes so the almond flour could absorb the liquid in the recipe. I also had to bake for an additional 5 minutes. Used cocoa nibs on top instead of chocolate chips for a low sugar option.

These were awesome! I served them with a St. Patrick’s dinner for desert and sent some home with my guest. Next day I took the remainder to a group meeting and got rave reviews. This is a keeper recipe.
