Lemon Arugula Orzo Salad in Lemon Cups

By adding juicy tomatoes and tender orzo, the salad becomes heartier while still keeping its
bright, citrusy flavor. For a show-stopping presentation, serve it inside hollowed-out lemons, perfect for parties, brunch, or picnics. Of course, it’s just as delicious served in a bowl for a quick and easy meal


Ingredients

1 Earthbound Farm Lemon Arugula Salad Kit
1 cup cooked orzo, cooled
1 cup cherry or grape tomatoes, halved
4–6 large lemons (for hollowing/serving cups)
Freshly cracked black pepper, to taste


Directions

Slice the tops off the lemons and carefully scoop out the pulp with a spoon. Trim the bottom just
slightly if needed so they sit flat. Set aside.
Cook orzo according to package directions, drain, and let cool.
In a large bowl, combine the Lemon Arugula Salad Kit greens, cheese, toppings, tomatoes, and
cooled orzo. Drizzle with the kit’s dressing and toss gently to coat.
Spoon the salad into the hollowed-out lemons for a fun appetizer-style presentation.
