A simple yet flavorful dish that celebrates the freshness of the ingredients. It’s perfect for a light lunch or as a starter to any meal. Pair it with some crusty bread for a satisfying and delicious experience. By massaging the baby kale with olive oil first, you ensure a more tender texture and better absorption of flavors throughout the salad.


5 cups Earthbound Farm Organic Baby Kale

1 cup cherry tomatoes, sliced in half

8 oz fresh mozzarella cheese, sliced into medallions

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Sliced bread, for serving


In a large bowl, place the baby kale leaves. Drizzle with about half of the extra virgin olive oil. Using your hands, gently massage the kale leaves for about 1-2 minutes until they begin to soften and wilt slightly.

In a small bowl, whisk together the remaining olive oil and balsamic vinegar until well combined. Season with salt and pepper to taste.

Add massaged baby kale to a platter, add the sliced cherry tomatoes and mozzarella medallions.

Pour the prepared dressing over the salad ingredients. Toss gently to coat everything evenly with the dressing.

Serve the dressed baby kale salad alongside slices of fresh bread and enjoy as a salad or as crostini.
