Tahini Caesar Salad

Make this Tahini Caesar Salad when you’re craving a classic with a flavor-filled twist. Plus, it’s a great excuse to make torn sourdough croutons


Ingredients

Tahini Caesar Dressing:
¼ cup well-mixed tahini

¼ cup fresh lemon juice

1 minced garlic clove

3 tablespoons organic mayonnaise

1 tablespoon maple syrup

2 tablespoons cup grated Pecorino

1 package Earthbound Farm Organic Romaine Hearts

Romano, Parmesan cheese, or nutritional yeast

¼ cup cold water

½ teaspoon fine sea salt

¼ teaspoon cayenne pepper


Directions

Dressing:

  1. Put all the ingredients in a food processor.
  2. Blend until smooth. It will be thick.
  3. If it’s too thick, you can add a bit of water to make it thinner.
  4. Taste it and add more salt, pepper, or lemon juice if needed.

Croutons:

  1. Heat your oven to 350 degrees F.
  2. Cut the sourdough bread into cubes.
  3. Toss cubes in a bowl with olive oil to coat.
  4. Sprinkle some salt and pepper on the cubes.
  5. Place on a baking sheet in a single layer.
  6. Bake them for 10-12 minutes.
  7. Stir them around and bake for 3-5 more minutes until they’re golden and let cool before adding to salad.
