Grilled Corn & Mango Renew Greens Bowl

The kind of salad that disappears at every summer table. Built on Earthbound Farm Renew Greens with grilled corn, mango, avocado, and a bright avocado-cilantro dressing, it’s colorful enough to be the centerpiece and easy enough to make any night of the week.


Ingredients

1 package (4 oz) Earthbound Farm Organic Renew Greens

2 ears of corn, grilled and kernels cut off

1 large mango, diced

1 ripe avocado, cubed

⅓ cup feta cheese, crumbled

¼ cup sliced scallions

For the avocado-cilantro dressing

1 ripe avocado

½ cup fresh cilantro

1 jalapeño, seeded

2 Tbsp lime juice

1 small garlic clove

¼ cup water, to thin

Salt & pepper to taste


Directions

  1. Make the dressing
    Blend avocado, cilantro, jalapeño, lime juice, and garlic until smooth. Add water a little at a time to reach a pourable consistency. Season with salt and pepper. Refrigerate until ready to use.
  2. Grill the corn
    Heat a grill or grill pan to high. Grill corn ears, turning occasionally, until charred in spots, about 8–10 minutes. Let cool slightly, then cut kernels off the cob
  3. Build the bowl
    Add Renew Greens to a large bowl or plate. Top with grilled corn, diced mango, scallions, and cubed avocado. Scatter feta cheese over the top.
  4. Dress & serve
    Drizzle the avocado-cilantro dressing generously over the bowl. Serve immediately with extra dressing on the side.
