This aptly named salad places the spotlight on the abundance of produce, offering a refreshing and colorful complement to the traditional Thanksgiving turkey. Even if you’re hosting a vegetarian celebration, it pairs perfectly with a variety of main dishes, like stuffed acorn squash, mushroom wellington or a butternut squash risotto. 


Ingredients

For the salad:

2 cups Earthbound Farm Organic Kale + Arugula

1 cup chopped radicchio

1 cup sliced apples

1 small fennel bulb, thinly sliced

1/2 cup dried cranberries or pomegranate seeds

1/4 cup toasted pecans or walnuts

Salt and black pepper, to taste

For the cranberry dressing:

1/2 cup fresh or frozen cranberries

1/4 cup orange juice

2 tablespoons honey

2 tablespoons red wine vinegar

1/4 cup extra-virgin olive oil

Salt and black pepper, to taste


Directions

  1. In a small saucepan, combine the cranberries, orange juice, and honey. Simmer over medium heat for about 5-7 minutes, or until the cranberries burst and the mixture thickens slightly.Remove the cranberry mixture from the heat and let it cool for a few minutes.
  2. Transfer the cranberry mixture to a blender or food processor, add the red wine vinegar, and blend until smooth.With the blender running, gradually add the extra-virgin olive oil until the dressing is well emulsified.Season the dressing with salt and black pepper to taste. Adjust the sweetness or acidity if needed.
  3. In a large salad bowl, combine the Kale and Arugula with the radicchio. Add the sliced apples, fennel, dried cranberries, and toasted pecans or walnuts.
  4. Drizzle the cranberry dressing over the salad. Start with a portion of the dressing and add more as needed, depending on your preference for the level of dressing. Toss the salad gently to coat the ingredients evenly with the cranberry dressing.Season the salad with salt and black pepper to taste. Toss again to distribute the flavors.
  5. Transfer the Everything But the Turkey Salad to a serving platter or individual plates.
