Beet Cauliflower Soup

- 2 heads of Earthbound Farm Organic Cauliflower -Broken into florets
- 3 tablespoons extra-virgin olive oil
- 1½ cup chopped onion
- 3 cups red beets, chopped and peeled
- coarse salt
- 6 cups chicken broth
- Crème fraiche for garnish
- Fresh dill for garnish
Be still our hearts! The sweetness of beets and the silkiness of cooked cauliflower make this extraordinary soup a palate pleaser. Dotting the soup with easy-to-make creme fraiche hearts will bring at least a little smile to their lips,
Heat oil in a medium pot over medium-high heat, add onion and sauté until translucent. Stir in cauliflower, beets, 1 teaspoon salt, and broth. Bring to a boil, then reduce to a simmer until beets and cauliflower are tender, about 20 minutes. Remove from heat and stir in 2 tablespoons of fresh dill. Let soup cool for 10 minutes then puree until smooth. You can add a little broth or water if necessary to thin.
Return soup to pot and bring to a simmer. Season to taste.
Divide into bowls. To make the heart design drop 3 pea-sized dollops of crème fraiche in a circle on the surface of the soup. Draw a toothpick or small knife through each drop following the shape of the circle. Garnish with dill and enjoy!
