Feta and Spinach Orzo Pasta Salad

This Mediterranean-inspired orzo pasta salad is fresh, vibrant, and full of herby flavor, made effortlessly with Earthbound Farm Chopped Spinach and Athenos feta crumbles. Crisp cucumbers, juicy tomatoes, and fragrant basil and parsley are tossed with tender orzo and a zesty Greek vinaigrette for a dish that’s light yet satisfying. Ingredients

1 cup dried orzo
2 small persian cucumbers, sliced
1 cup cherry tomatoes, halved
1/2 cup freshly chopped parsley
1/4 cup chopped fresh basil
1 1/2 cups Earthbound Farms Chopped Spinach
1/2 cup Athenos Feta Cheese crumbles
1 cup greek vinaigrette
Cracked black pepper, to taste


Directions

Cook your orzo pasta according to the package directions, about 7-8 minutes or until al dente. Drain and set aside.

In a large bowl add sliced cucumbers, chopped parsley, chopped basil, Earthbound Farms chopped spinach, Athenos feta cheese and cooked orzo. Drizzle with greek vinaigrette. Toss everything together until the vinaigrette has evenly coated the ingredients.

Taste test and season with kosher salt and cracked black pepper as desired. Transfer to a serving platter.

Garnish your orzo salad with extra feta cheese crumbles. This dish can be served cold or at room temperature.
