Ingredients

● 1 (12 oz) bag Earthbound Farm Brussels Sprouts, trimmed and halved
● 1½ tbsp olive oil, plus more for drizzling
● Salt and pepper, to taste
● 3–4 oz block feta cheese (for slicing into cubes)
● 1 tbsp finely chopped fresh parsley


Directions

1. Preheat oven to 425°F. Line a small baking sheet with parchment.

2. Toss the halved Brussels sprouts with olive oil, salt, and pepper. Arrange them cut side down on the sheet.

3. Roast for 18–22 minutes, flipping halfway, until crisp and golden brown.

4. While roasting, slice the feta into small cubes or squares—about the same size as the Brussels halves—for a clean checkerboard look.

5. Assemble the checkerboard on a small platter or board, alternating roasted Brussels sprouts and feta cubes in a grid pattern.

6. Drizzle with a little extra olive oil and sprinkle with fresh parsley
