Was your summer filled with languid leisure, rollicking adventures, or some rewarding blend of the two? With this glorious season in the homestretch and the joys of fall right around the corner, our thoughts are turning not just to back-to-school, but back-to-routine. PSLs and decorative gourd season are on the horizon, ya’ll. We gotta get ready!
Besides, having a routine helps create space in our lives to do the things we want to do, because we don’t have to figure everything out on the go. And routine doesn’t have to be, well, routine. We find it helps to have some simple, go-to dinners at the ready. Oh…and healthy and delicious and all that jazz, too.
Here are a few easy-yet-yummy dinners to help you make a satisfying transition into your fall routine.
We love baby kale in pasta dishes: it’s so easy and adds great flavor, texture, color and nutrients. Here we’ve combined some favorite Mediterranean ingredients — garlic, sundried tomatoes, capers, parsley — and paired them with chicken and kale. (This dish is just as delicious without the chicken if you prefer a vegetarian version.) Leftovers, if there happen to be any, can be rewarmed easily in the microwave.
These Chicken Burrito Bowls with Cilantro Lime Cauliflower Rice, from Marcie of Flavor the Moments, are healthy and low carb. They’re also gluten-free, dairy free, paleo, Whole30, and keto friend
You don’t need to be an experienced baker to make these super simple hand pies. The spinach and four-cheese filling is slightly spicy thanks to the pepper jack cheese. Don’t have any Mighty Spinach on hand? These satisfying little pies are equally delightful with any of our spinach- or baby kale-based blends.
This is more of a formula than a recipe, but it’s our go-to meal when we need to get dinner on the table quickly. The shiitakes and Parmesan give this meatless dish plenty of umami.
