  • 1 bag  Earthbound Farm Organic Snap Peas
  • 1/2 red onion, diced
  • 2 blocks ramen noodles
  • 5 mushrooms, sliced
  • 1 carrot, thinly sliced
  • 1/2 cup cabbage
  • For the Sauce:
  • 1 tablespoon tamari
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon cayenne
  • 1 teaspoon coconut sugar
  • 2 garlic cloves
  • 1 inch ginger root (grated)
  • 3 tablespoons water

Cook ramen noodles according to package instructions. Mix all ingredients for the sauce in a small bowl.

Heat 1 tablespoon sesame oil in a pan over medium heat. Add onions, stirring for a few minutes until slightly translucent. Add carrots, mushrooms, snap peas, and cabbage. Cook until veggies are soft, about 4 minutes.

Add the sauce and the cooked noodles. Combine it all, garnish with toasted cashews and sesame seeds, and enjoy!
