Ingredients
- 1 bag Earthbound Farm Organic Snap Peas
- 1/2 red onion, diced
- 2 blocks ramen noodles
- 5 mushrooms, sliced
- 1 carrot, thinly sliced
- 1/2 cup cabbage
- For the Sauce:
- 1 tablespoon tamari
- 1 teaspoon rice vinegar
- 1 teaspoon cornstarch
- 1/4 teaspoon cayenne
- 1 teaspoon coconut sugar
- 2 garlic cloves
- 1 inch ginger root (grated)
- 3 tablespoons water

Cook ramen noodles according to package instructions. Mix all ingredients for the sauce in a small bowl.
Heat 1 tablespoon sesame oil in a pan over medium heat. Add onions, stirring for a few minutes until slightly translucent. Add carrots, mushrooms, snap peas, and cabbage. Cook until veggies are soft, about 4 minutes.
