Ingredients

  • 5 ounces Earthbound Farm Organic Baby Arugula
  • 2 medium pears (or 2 medium peaches), cut into small bite-sized pieces
  • 2/3 cup crumbled feta cheese
  • ½ cup toasted pecans, chopped
  • ¼ cup avocado oil (substitute sunflower oil or any mild oil)
  • salt (to taste)
  • pepper (to taste)
  • ¼ cup white balsamic vinegar

Get ready to be crowned “Potluck Queen” (or King) without breaking a sweat. This super simple salad never fails to generate rave reviews at any gathering because of its fresh ingredients and harmonious pairings of flavors and textures. It contains nutty/peppery arugula, sweet fruit, salty feta, and crunchy pecans. And you can throw it together in under 10 minutes if you have the ingredients on hand.

A couple notes: Choose fruit that’s in season during the time of year you’re making the salad. (In winter you would choose pears. Try peaches in the summer.)

Feel free to adjust the amount of any of the toppings – the salad is very forgiving. White or golden balsamic vinegar is the secret ingredient – it brightens up the salad and makes all the flavors sing.

To assemble the salad, put the arugula in a large bowl. Drizzle with the oil and toss to coat the greens (using less or more as you prefer). Be careful not to use too much oil or the greens will get soggy.

Then sprinkle on some salt and pepper. Toss again to distribute the seasoning throughout the leaves.

Give a leaf a taste to see if you’ve got enough seasoning. Add more if needed. Then drizzle with the vinegar.

Arrange the seasoned greens on a nice platter and top with the fruit, cheese, and nuts.
