Stir-Fry Broccoli with Basil and Parmesan

  • 2 teaspoons olive oil
  • 1 package Earthbound Farm Organic Broccoli & Carrots
  • 2 clove garlic
  • 1/2 cup vegetable or chicken broth
  • 3/4 teaspoon cornstarch
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons grated Parmesan cheese

Stir-frying broccoli and carrots have several advantages: you don’t need water, which dilutes the flavor; you have more control over the texture than boiling or microwaving; and you can cook it al dente, so it’s just the right amount of crisp!

Here we season the broccoli and carrots with fresh basil and Parmesan cheese for a delicious side dish that complements almost any entrée.

In a large skillet, preferably nonstick, heat the oil over high heat. Add the broccoli and carrots for 2 minutes. Add the garlic and cook for 2 to 3 minutes more, or until the broccoli is lightly browned and almost tender.

In a small bowl, stir the cornstarch into the broth until dissolved. Add the liquid to the broccoli. Stir-fry for 1 minute or until tender.

Stir in the basil and vegetables for 1 minute just to warm it. Remove the pan from the heat and stir in the Parmesan cheese. Serve immediately.
