Ingredients
- 4 oz Earthbound Farm Greenhouse Spring Mix
- 1 can chickpeas, rinsed and drained
- 4 oz fresh corn kernels cut off the cob (substitute canned corn if corn is out of season)
- 1 pear, sliced
- ¼ red onion, diced
- 1 cucumber, diced
- 1 avocado, cut into chunks
- ½ cup toasted seed mix (pepitas, sunflower seeds, whole flax seeds, sesame seeds)
- ½ cup fresh herbs (we used curly parsley, cilantro, and mint)
- balsamic, olive oil, salt, and pepper for dressing
- Couscous:
- 1 cup couscous (uncooked)
- ½ cup dried cherries
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 ¼ cup water, hot
Combine couscous, cherries, ground spices (cumin, coriander), cracked pepper, and salt in a bowl. Pour hot water over everything, cover with a plate, and let stand until the couscous is cooked, about 6 minutes. Let it cool. Plate everything as you wish and season to taste!
