Spinach & Cheese Pizza with Cauliflower Crust

Ingredients
- PIZZA TOPPING
- 1/2 cup pizza sauce
- 1/2 cup shredded organic mozzarella cheese
- 1/2 cup shredded organic cheddar cheese
- 1/4 cup fresh, chopped basil leaves
- 1/4 cup fresh Earthbound Farm Organic Spinach
- 1/2 tsp crushed red pepper flakes
- CAULIFLOWER CRUST
- 14 oz Earthbound Farm Organic Riced Cauliflower
- 2 large eggs
- 1/2 cup shredded organic mozzarella cheese
- 2 tbsp freshly grated Parmesan cheese
- 1 tbsp Italian seasoning
- salt and black pepper
All the deliciousness of cheese pizza with the power-packed goodness of cauliflower crust and spinach!
Preheat oven to 425 degrees F. Line a 15 x 10″ baking sheet with parchment paper or a silicone baking mat; set aside.
Cover loosely and microwave riced cauliflower for 4-5 minutes, or until softened; let cool.
Using a clean dish towel or cheese cloth, drain cauliflower completely, removing as much water as possible.
Transfer cauliflower to a large bowl. Stir in eggs, mozzarella, Parmesan and Italian seasoning; add salt and pepper, to taste.
Lightly spray the parchment paper with nonstick spray and spread cauliflower mixture onto the prepared baking sheet. Bake for 12-15 minutes, or until golden.
Top with pizza sauce, chopped basil, red pepper flakes, remaining cheese, and spinach. Place into oven and bake until the cheese has melted, about 3-5 minutes.
Cut and serve while warm.
