  • 1 lb jumbo shrimp (peeled and deveined)
  • 1 package Earthbound Farm Organic Little Gems
  • 1/2 onion
  • 2 bay leafs
  • 2 chile de arbol
  • 1/2 lemon
  • handful cilantro
  • Salt and pepper to taste
  • 1 fresno pepper (finely chopped)
  • 2 tbsp chives (chopped)
  • 1 tbsp red wine vinegar
  • 1 tsp sesame oil
  • 1.5 tbsp tamari or aminos
  • 1 mandarin
  • 1 tsp honey
  • 1 tsp grain mustard
  • Cilantro to taste
  • 1 carrot (shredded)
  • 1 avocado
  • chopped almonds

Everyone loves Little Gem lettuces, right?  This recipe for Spicy Shrimp Little Gems Wraps by Food My Muse  is a spicy and satisfying way to bring so many summer flavors together. 

Boil some water with the onion, bay leaf, lemon, cilantro, chile de arbol, salt and pepper.

Once it’s on a rolling boil, kill the heat. Add the shrimp and let them cook covered for 5-8 min or until fully pink.

Add shrimp to ice bath. Drain and place in a bowl. Chill for 20 min in the fridge.

Mix everything for the sauce.

Assemble the wraps, starting with the avocado, carrot, shrimp, sauce, cilantro and chopped almonds. Enjoy!
