Sheet Pan Meal
Prep time: 10 minutes • Cook time: 30 minutes
Yields: 4 Servings
Preheat oven to 425°F.
Toss 1 lb. of root vegetables, cut into 1/2 inch pieces, with 1 tbsp. oil and salt and pepper to taste. Spread evenly on a rimmed baking sheet and roast for 15 minutes.
Toss your other veg (2-4 cups) with the root vegetables. Add another tbsp. of oil to 1.5 lbs. of your protein of choice, season, and place on top of your vegetables.
Roast until the protein is cooked and all your vegetables are tender, about 10 to 15 minutes.
If you have any of our organic baby greens on hand, such as spinach or kale, feel free to toss two cups in with everything at the end. If you’re using flavor-enhancing toppings —bacon, cheese, toasted nuts, or citrus—add them here as well. Voila! Dinner is served.
