Salmon Salad with Avocado, Eggs & Lemon Thyme Dressing

  • 1 large salmon filet
  • 1 organic avocados, sliced
  • 2 eggs, hard boiled
  • 1 cup grape tomatoes
  • Earthbound Farm Organic Kale Italia
  • 5 tablespoons extra virgin olive oil
  • 1 lemon (juiced)
  • salt
  • pepper
  • 1 sprig thyme

This sunny salad from Niki Csányi could double as breakfast or supper, loads of superfoods are tied together with a delicious lemon thyme dressing.

Pre-heat oven to 375

Add 4 tbsp of olive oil, lemon juice, salt, pepper, and fresh thyme to tomatoes and greens, toss to coat

Sear the salmon in the pan, skin side down. Flip after 3 minutes and cook until golden

Place salmon pan in the oven for 5 additional minutes until cooked through

Assemble all remaining ingredients
