Roasted Earthbound Farm Veggie Medley & Power Greens Salad with Chimichurri Dressing

- 1 bag Earthbound Farms Vegetable Medley
- 1 5 ounce package of Earthbound Farm Power Greens Salad Mix
- Coarse salt
- Chimichurri Dressing
- 1/2 cup Marcona Almonds, roughly chopped
- ½ bunch Italian flat-leaf parsley
- 3 cloves garlic
- 1 pinch crushed red pepper
- 1 tablespoon dried Italian seasoning
- 3 tablespoons white wine vinegar
- 9 tablespoons extra-virgin olive oil, divided
The bright flavor of chimichurri can bring out the best in veggies. Here, roasted organic veggies and organic Power Greens are lightly coated with a simple, homemade chimichurri to make a delightful and nutrient-dense salad of extraordinary flavor.
Roast the veggies:
Preheat oven to 400 degrees Fahrenheit.
Arrange Earthbound Farm Vegetable Medley on one large baking sheet. To make clean-up easier, you can line the baking sheet with parchment, if desired. Drizzle with 3 tablespoons extra-virgin olive oil and sprinkle with coarse sea salt. Toss to coat. Roast until veggies are browned and tender, about 15 minutes or so. Set them aside to cool slightly.
Make the Chimichurri Dressing:
Place the parsley, garlic, crushed red pepper, Italian seasoning, white wine vinegar and remaining 6 tablespoons of oil in a food processor. Blend until smooth. Check seasoning and adjust to taste. Divide the chimichurri mixture, placing half into a medium bowl. When the veggies are roasted, add them to the bowl with half the chimichurri and toss to coat.
Assemble the Salad:
Place the Earthbound Farm Organic Power Greens in a large salad bowl and toss with enough of the remaining chimichurri to lightly dress the greens. Top with the roasted veggies and drizzle the remaining chimichurri over the salad. Garnish with the Marcona almonds.
