  • 1 bag  Earthbound Farm Organic Vegetable Medley
  • 1 pound chicken breasts, butterflied + pounded thin
  • 2 cups potatoes, cut in ½ inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 2 teaspoons fresh thyme
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

You can never have enough inspiration for a simple, delicious, and nourishing sheet pan meal. This version by The Clean Eating Couple will surely become a weeknight staple with its great taste and super simplicity. 



In a bowl mix together marinade ingredients (olive oil, honey, mustard, spices) until combined. Coat chicken in marinade and allow it to marinate in a large bowl for at least 5 minutes (30 minutes is best!)

Preheat your oven to 400 degrees and prepare a parchment lined baking sheet.

While the chicken marinates, chop the potatoes. Add potatoes and Earthbound Farm Organic Vegetable Medley to the bowl and toss with the chicken to coat with marinade. Lay the chicken and vegetables flat on the baking sheet.

Bake at 400 degrees for 25-30 minutes until chicken is browned (internal temperature should be 165 degrees) and veggies are tender. Serve and enjoy!
