Pronto Chicken Caesar Flatbread

  • Earthbound Farm Organic Caesar Kit
  • 2 organic boneless, skinless chicken breasts (or use about 8-10 ounces of pre-cooked chicken)
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 package Stonefire Naan Flatbreads (2 flatbreads come in one package)
  • kosher salt, pepper, crushed red pepper flakes
  • 1 1/2 cups shredded mozzarella cheese

This simple, quick and flavorful flatbread comes together with precious little effort and whole lot of flavor. If you have leftover chicken in the fridge, it’s even quicker.

Set a skillet over medium heat and add ½ tablespoon of the olive oil. Season chicken with salt and pepper, put the chicken in the skillet. Cook 8 to 10 minutes or until chicken is cooked through (165°F), flipping halfway through cooking. Remove from skillet, let cool, and thinly slice.

In a small bowl whisk together the remaining 1 tablespoon olive oil and garlic. Brush the Naan bread with the garlic oil.

Place the Naan flatbreads on a lined baking sheet. Divide the sliced chicken evenly on the flatbreads and sprinkle with the shredded mozzarella cheese. Place in the oven on broil 3 minutes until cheese is bubbling, keep a close eye so the bread doesn’t burn.

While the flatbreads are toasting, put the greens from the Earthbound Farm Organic Caesar salad kit into a large bowl, then add the dressing and toppings. Toss thoroughly.

When the flatbreads have cooled slightly, top them generously with the Caesar salad and serve immediately, with any extra Caesar salad on the side.
