- 14 ounces Earthbound Farm Organic Cauliflower Medley
- 1/2 cup peas
- 1 cup pineaple diced
- 3-4 cloves organic garlic minced
- 1 tablespoon olive oil
- 2 scrambled eggs (Substitute option: 4 egg whites)
- 3 tablespoons soy sauce
Replace the rice with cauliflower to make this delicious fried “rice” dish that’s big on flavor yet light and nutrition-dense!
In a large pan, sauté garlic in olive oil on a medium/high heat (about 3-5 minutes).
Add in cauliflower medley and peas and cook until carrots begin to soften and peas are heated through, about 3-5 minutes.
Next, stir in scrambled eggs, pineapple, and soy sauce. Cook, stirring frequently, for about 5-7 more minutes.
