Pasta with Spinach and Shiitakes

Ingredients

  • Shiitake Mushrooms, sliced (the amount is up to you)
  • Earthbound Farm Baby Spinach (it cooks down, so use more than you think you'll need)
  • Your favorite pasta (we prefer spaghetti or orecchiette)
  • Olive Oil (enough to sauté the mushrooms)
  • Parmesan

This Pasta with Spinach and Shiitakes is more of a formula than a recipe, but it’s our go-to meal when we need to get dinner on the table quickly. The shiitakes and Parmesan give this meatless dish plenty of umami.

Make it:

Boil water then cook the pasta according to package directions or how you like it. Save just ½ cup or so of the pasta water then drain it.

Meanwhile, heat a few tablespoons of olive oil in large, heavy skillet over medium low heat. How much? Depends on how many mushrooms you’re using.

Add the mushrooms and sauté them nicely. You can caramelize them if you have a little extra time.

When the mushrooms are pretty much done, add the spinach by handfuls to the skillet and wilt it.

Add the pasta to the skillet, along with the reserved pasta water and mix everything really well.

Finally, add some Parmesan and mix it again.

Pro Tip: This recipe is also delicious the next day.
