Who doesn’t love a little sweet and sour kinda bowl from time to time? Or all the time, even. Lindsay at Weeknight Bite whipped up this incredibly (and super simple) tasty dish featuring all the sweet and sour flavors done up paleo style.
Cut chicken breasts into bite-sized pieces, place in a bowl & season with salt & pepper. Add 2 tablespoons arrowroot & toss the chicken to coat it evenly.
Heat avocado oil in a large skillet over medium-high heat. Add chicken & sear for about 2-3 minutes on each side until starting to brown but not fully cooked through. Transfer to a plate & set aside.
In the same skillet used for the chicken, combine orange juice, coconut aminos, sesame oil, garlic, ginger, & rice vinegar. Stir, bring to a boil, then reduce to a simmer. Once simmering, add ½ teaspoon arrowroot flour & continue to stir until thickened. Add the chicken back into the skillet, toss in the sauce & stir in orange zest. Push chicken to one side of the skillet, making room for the broccoli. Add broccoli florets plus 2 tablespoons of water, cover with a lid until the broccoli stems and the chicken is cooked through, about 5 minutes.
Once the broccoli is tender, season it with salt & pepper, then transfer your chicken & broccoli to a bowl. Garnish with a little more orange zest, green onions, & sprinkle with toasted sesames seeds (and some red pepper flakes if desired).
