Organic Mixed Berry Coulis Parfait

- 3 cups Earthbound Farm Frozen Organic Triple Berry Blend
- 2 Tbsp sugar (or more, to taste, if you like it sweeter)
- 1 Tbsp freshly squeezed lemon juice
- zest of one lemon
- 1 32-oz. Wallaby Organic Whole Milk Plain Greek Yogurt
Bring a pop of summer berry deliciousness to your favorite dessert recipes with this super simple and versatile mixed berry coulis (sauce). Featuring the bright berry flavors of Earthbound Farm Organic Frozen Berry Basket Blend, this velvety sauce will impress guests when you drizzle it over panna cotta, cakes, tarts, poached fruit or ice cream. However, our favorite, every day application is a parfait with plain organic Greek yogurt. It visually stunning, simple and a deliciously tangy, not-too-sweet treat.
In a medium saucepot set over medium heat, add the berries, sugar, lemon juice and zest.
Bring to a boil and cook until the liquid starts to thicken, about 5 minutes. Strain the mixture through a fine-mesh sieve, forcing as much of the fruit through as possible by pushing and scraping thoroughly with a rubber spatula. (This helps ensure you extract more pectin from the fruit, which will make a thicker, more luxurious sauce). Let the sauce cool completely and store in the refrigerator until ready to serve.
For the yogurt parfait, use a pint or fountain glass and alternate layers of organic, whole greek yogurt with the coulis. Or, for a more decadent treat, spoon this sauce over your favorite dessert (cakes, pies, ice cream, panna cotta, etc.)
