Nourishing Green Broth

Yields: 2 small mugs
- 1 cup Rich broth or stock
- 1 cup Earthbound Farm Baby Arugula
- 2 tablespoon tarragon
- 2 tablespoon chervil
- 2 tablespoon chives
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon ghee or grass fed buter
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon collagen (optional)

My friends and family swear it has magical powers. It’s also completely delicious and a snap to make. The key here is rich bone broth, the re-branding of what our grandparents called “broth” or “stock” that is taking the nation by storm and for good reason – properly prepared broth made from the bones of healthy animals is incredibly nutritious. I suggest you make your own, but more and more often, good restaurants, delis and online purveyors are making it for you. However you acquire it, blitz it in a powerful blender with fresh greens and herbs, grassfed butter, fresh lemon, and perhaps powdered collagen for extra ooomph, and see if you don’t feel warmed and lifted from sipping it.
Heat broth until very hot.
While broth heats, put remaining ingredients except salt in a Vitamix or other high-powered blender. Pour broth into the blender and (carefully, especially when working with hot liquids) blend on high speed until pale green and frothy.
Season to taste with salt and additional lemon juice.
