Green Beans with Toasted Garlic and Parmesan Bread Crumbs

Ingredients
- 1 clove garlic
- 3 slices whole wheat bread
- 1 package Earthbound Farm Frozen Organic Green Beans
- 2 tablespoons unsalted butter
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper
Fresh bread crumbs, sautéed in butter until ultra-crisp and golden, are delicious over green beans, but they’ll dress up almost any vegetable you like.
Try them with asparagus, peas, broccoli, cauliflower and carrots, too!
In a medium saucepan over high heat, bring 1/2 cup water to a boil. Add the frozen green beans, reduce heat to medium and simmer, covered, for 4 to 6 minutes or until tender, stirring once. Drain and season with salt and pepper to taste.
Meanwhile, put the garlic into the bowl of a food processor and process until minced. Tear the bread into quarters and process it with the garlic into crumbs.
In a medium skillet, melt the butter over medium-high heat. When the butter has melted, stir in the bread crumb mixture. Sauté until the crumbs are golden brown, about 5 minutes. Remove from heat and stir in the cheese.
Serve the beans hot and sprinkle the toasted crumbs over each serving.
Fresh Variation: Substitute 10 oz fresh green beans for the frozen. Trim (“top & tail”) the beans; if they’re large, cut them in half or into thirds. Simmer them in the water for 3 to 6 minutes or until tender (timing will vary depending on their age and size).
