Fig and Walnut Butter Lettuce Salad

  • 1 pack Earthbound Farm Organic Baby Red Butter Lettuce
  • 2 Sweet Potatoes, diced
  • 4 Fresh figs, halved
  • Feta cheese
  • 1/2 cup Walnuts
  • Salt and Black pepper, to taste
  • 2 tablespoons Olive Oil
  • Za’atar mix spices (optional)
  • Dressing:
  • 1/4 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Honey
  • Salt and Black pepper to taste

This salad from Uncomplicated Chef brings together the delightful flavors of late summer and early fall. Perfect for a weekend lunch or light dinner with a glass of rosé and some crusty bread.

Preheat oven to 425 F degrees. Dice sweet potatoes and transfer them on a baking sheet. Season sweet potatoes with salt, black pepper, and olive oil. Roast sweet potatoes for 15-20 minutes.

In the meantime, toast the walnut in a sauté pan.
In a small bowl combine ingredients for the dressing. Mix or shake well using a jar!
In a medium bowl start building the salad with a layer of Earthbound Farm Organic Baby Red Butter, continue with roasted sweet potatoes, fresh figs, toasted walnuts, feta cheese, and sprinkle Za’atar mix.

Drizzle dressing over the salad. Toss and enjoy!
