Farro & Apple Salad with Maple Vinaigrette

  • 4 big handfuls  Earthbound Farm Organic Spring Mix or  Organic Sweet Baby Lettuces
  • 1 large carrot, scrubbed clean and peeled into ribbons
  • 1 apple, sliced
  • 1/2 fennel bulb, thinly sliced
  • 1/4 cup pistachios (any nuts would work - pecans or hazelnuts would also be great!)
  • 1/4 cup farro, cooked according to package instructions
  • For the dressing:
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon pure maple syrup
  • 1/4 teaspoon salt
  • 1 half of a lemon, squeezed

Place a bed of Earthbound Farm Organic Greens into a shallow bowl (tip: using a shallow bowl or platter means all of the yummy toppings won’t get lost at the bottom of a large bowl!). Top with all other salad ingredients. Whisk dressing together in a small bowl and season to taste. Drizzle the dressing over your salad, toss, and enjoy!
