Earthbound Farm Spring Mix Gyros

Ingredients

  • 5oz Earthbound Farm Spring Mix
  • FOR THE CHICKEN

  • 4 boneless, skin-on chicken thighs
  • 2 lemons, juiced
  • ½ cup olive oil
  • cloves garlic peeled, smashed and minced
  • Kosher salt and freshly cracked black pepper
  • 3 teaspoons ground cumin
  • 2 teaspoons paprika
  • ½ teaspoon red-pepper flakes
  • FOR THE SALAD

  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, diced
  • 1/4 cup crumbled feta
  • ½ cup red onion, diced
  • Salt & pepper
  • Juice from one lemon
  • FOR THE SAUCE

  • ½ cup Greek yogurt
  • 1 teaspoon hot sauce
  • 4 pieces of Pita bread

Gyros have all the four food groups in one delicious hand-held wrap. This version (made with grilled, marinated chicken rather than the elaborate rotisserie meat) lets you make them at home without much effort. Just be sure to give the chicken enough time to marinate because that’s the key to its great flavor. If you think of it, get the chicken in the marinade in the morning (or even the night before) and let it sit. Then when you go to prepare the meal, it will come together quickly with full-flavored meat. 

MAKE THE CHICKEN 

In a large bowl combine the juice of two lemons, olive oil, garlic, salt, pepper, cumin, paprika, and red-pepper flakes. Add the chicken and toss to combine. Refrigerator for at least 1 hour and up to 12 hours.

Preheat a cast iron skillet (or other heavy skillet) to medium high heat and give it a light coating of oil. Remove the chicken from the marinade and cook each chicken thigh for 4-5 minutes on each side until done (internal temperature should reach 165° F). Remove from heat and set aside to rest. When the chicken is cool enough to handle, slice into thin strips, cutting against the grain of the meat.

Toast the pitas. You can do this on the open flame of a gas stove using tongs, on a skillet on top of the stove, or under the broiler. Any way you choose, watch closely so they don’t burn.

MAKE THE SALAD

In a large bowl, mix cucumber, cherry tomatoes, feta, and onion. Season with salt and pepper and juice from one lemon.

MAKE THE SAUCE

Pu the Greek yogurt in a small bowl and hot sauce to taste.

ASSEMBLE THE GYROS

Lay each pita flat and layer in the Earthbound Farm spring mix, chicken, and salad.  Top each gyro with a generous dollop of sauce and salt and pepper to taste.
