Crispy General Tso’s Brussels Sprouts

  • 2 packages Earthbound Farm Organic Brussels Sprouts
  • 2 tablespoons arrowroot starch/powder or cornstarch
  • 1 teaspoon vegetable or olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • General Tso’s Sauce
  • 1/2 cup vegetable broth
  • 1/4 cup soy sauce
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons maple syrup
  • 1 1/2 tablespoons sriracha or chili sauce
  • 1 clove garlic – minced
  • 1 1/2 tablespoons arrowroot starch/flour or cornstarch
  • 1 teaspoon ginger – minced
  • +optional sides and garnishes like quinoa, cilantro and sesame seeds

Preheat oven to 425 degrees. Toss Brussels sprouts in oil, salt, pepper and starch. Roast for 25-30 minutes until crisp. Once your Brussels sprouts are done roasting, set aside to cool and start your sauce. Whisk together sauce ingredients and then add to a saucepan over medium heat. Bring to a simmer until sauce has thickened, whisking sauce to prevent clumps. This will take about 2 minutes. Combine sauce with Brussels sprouts and desired sides and toppings. Enjoy!
