Cheesy Cauliflower and Broccoli Dip

  • 1 package Earthbound Farm Organic Broccoli & Cauliflower
  • 2 small garlic cloves
  • 1/2 c whole milk greek yogurt
  • 1 1/2 tbsp evoo
  • Heaping 1/2 tsp dijon mustard
  • 1/2 tsp sea salt
  • 1/3 c grated gruyere cheese
  • Red pepper flakes
  • Toasted baguette slices

Every holiday party needs a great dip- especially if it only has a handful of ingredients! The key ingredients for this cheesy cauliflower and broccoli dip are: cauliflower, broccoli, cheese and Greek yogurt! Yum! Be prepared to share this recipe with all of your guests once it is all out.

Preheat oven to 450 degrees. Separate the broccoli and cauliflower from the Earthbound Farm blend. Bring a large pot of water to boil. Add the cauliflower and garlic and boil until the cauliflower is fork tender, about 8 minutes. Using a slotted spoon scoop 3/4 of the cauliflower and all of the garlic into a blender. Set the remaining florets aside. Let cool completely before adding remaining ingredients to blender. Meanwhile, boil the broccoli until fork tender. Set aside. Once cool enough break remaining florets into bit sized pieces.  

Add yogurt, olive oil, mustard, and salt to the blender and blend until creamy. Add a splash of cooking water if necessary to smooth out mixture. Spread the cauliflower mixture into the skillet and top generously with the reserved cauliflower and broccoli florets, the cheese and sprinkle with red pepper flakes. 

Bake 15-18 minutes or until the cheese on top is browned and bubbling. 

Enjoy with toasted baguette slices.
