  • 1-3 cups of pre-roasted Earthbound Farm Broccoli
  • 1 baguette, sliced ½" thick on a diagonal (about 12 slices)
  • olive oil
  • kosher salt
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar
  • ½ teaspoon crushed red pepper flakes
  • 1½ cups fresh ricotta
  • Freshly ground black pepper

This simple recipe puts roasted organic broccoli in an unexpected place — sitting atop ricotta on baguette toast, drizzled with delectable hot honey. No one’s gonna say they don’t want to eat their vegetables with these bodacious bites in front of them.

To toast the baguette slices, preheat the over to 350 degrees Farenheit. Brush each slice with a little olive oil and set them on a sheet pan. Bake for 10-12 minutes until lightly browned. Remove from oven to cool.

Whisk honey, vinegar, and red pepper flakes in a small bowl. In a second bowl whip ricotta until smooth and season with salt and pepper.

Spread ricotta over toasts and top with roasted broccoli. Arrange on a platter and drizzle generously with honey mixture.
